Sunshine and Saladtime
Today was a good day. The sun was shining, the Willamette was full of eager boaters, and I went to my first outdoor dinner of the year. We haven’t had consistent sunshine for quite some time now so a number of Portlanders were flocking to their nearest patio bar to catch some rays before they disappear (including us!). As we walked down the streets of Sellwood we started losing hope of finding a table outside but we finally spotted a tiny table for two outside Gino’s restaurant across from the funky “Love Art!” gallery.
Gino’s specialties consist of some delicous-sounding pasta’s but we just couldn’t bring ourselves to order a heavy dish like that. Hot soups and pasta’s were okay when it was rainy and dreary but we decided it was time for something a little lighter. We enjoyed a delicious vegetable salad with perfectly cooked and seasoned cauliflower, beets, and carrots along with a medium-rare skirt steak on a bed of arugula.
The delicious salad at Gino’s reminded me that I’ve been meaning to share a recipe with you. Our good friend Grant made an awesomely refreshing cucumber salad for us over Easter that would be perfect for a light summer side dish. Cool, crisp, and a little spicy.
