Superbowl Stuffed Peppers
While I was doing some last-minute Christmas shopping I spotted a racy recipe book called “Any B*tch Can Fake It: Recipes Easy Enough to Lie About” . I bought it solely based on the title and found a great little recipe called “Cheese Stuffed Chiles” by Betty Lou Hammer. I couldn’t find any chiles at the grocery store so I opted for Serrano peppers instead. These peppers were great substitutes and they added some extra kick, which I always enjoy. This recipe takes a little extra care but was well worth the trouble!
Here’s what you need:
-25 small green chiles or peppers (jalapeno or serrano)
-1 cup grated cheddar
-3 eggs-beat
-1/2 cup mayo
-8 oz. softened cream cheese (I use 1/3 less fat)
-Crushed corn flakes
Here’s how you make it:
(1) Cut peppers in half lengthwise (IMPORTANT: DON’T FORGET TO WEAR GLOVES!)
(2) Discard seeds and veins
(3) Mix mayo and cheeses
(4) Stuff peppers with mixture
(5) Dip each pepper in egg
(6) Roll in corn flakes (I made an assembly line of stuffed peppers, eggs, and corn flakes)
(7) Place on a cookie sheet and bake for 30 minutes at 350 degrees
(8) Enjoy!

I make a good stuffed pepper too, although with a chicken parmesan filling.
