Mindy’s Spicy Chopped Potatoes

After searching through my stack of cookbooks for a great side dish to complement our home made Valentine’s Day dinner, I remembered a delicious dish from my good friend’s bachelorette party. So I called my friend Mindy to get her fantastic recipe for spicy chopped potatoes. This recipe will feed a crowd of crazy bachelorette party-goers but it would also be perfect for a summer barbeque with lots of friends. If you’re planning to make it for a party of two (like we did) be prepared to have leftovers for days!

Here’s what you need:

– 8-10 medium size red potatoes
– 1/2 lb bacon (about six strips)
– 4 oz chopped jalapenos
– 1 large white onion, chopped
– 1 bell pepper, chopped (choose any color you like, I chose orange for color)
– 1 1/2 cups shredded cheese
– 2 tablespoons butter
– Johnny’s seasoning
– Salt and pepper to taste
– Shallow baking tray
– Tin foil
– Non-stick spray

Here’s how you make it:

– Pre-heat oven to 425 degrees
– Wash potatoes and cut into bite size pieces, set aside
– Cook bacon and cut into bite size pieces (only cook bacon until “wimpy” not crispy)
– Line the bottom of the baking tray with foil and grease with non-stick spray
– In a large bowl or bag combine potatoes, onions, peppers, and jalapenos
– Sprinkle with Johnny’s seasoning and salt and pepper to taste
– Place a lid over the bowl or close the bag and shake until well mixed
– Spread mixture across the bottom of the tray
– Cut butter into pieces and drop around tray
– Top entire mixture with shredded cheese
– Bake for 1 1/2 or 2 hours (depending on how crispy you like them)
– Enjoy!
