Baja Fish Tacos
Last week I had a craving for fish tacos, yet another seafood dish I fell in love with after moving to the west coast. Something about the crunchy breading on the fish, tangy sauce, and warm corn tortilla spells comfort food to me. I found this recipe on cdkitchen.com, a great recipe website that allows you to conveniently print recipes on pre-defined recipe cards. Just print, cut, and go! I modified this one a bit to fit my taste.
Here’s what you need:
-1/2 cup nonfat sour cream
-1/2 cup nonfat mayonnaise
-1/4 cup chopped fresh cilantro
-1 package taco seasoning mix (I use McCormicks)
-1 lb breaded cod or white fish fillets (I use Tilapia)
-1 package corn tortilla shells (warmed)
-Chopped tomato
Here’s how you make it:
(1) Cook fish and cut into strips
(2) Combine sour cream, mayo, cilantro, and 2 tablespoons of taco seasoning mix
(3) Spread sour cream mixture on warm tortilla
(4) Fill with fish, cabbage, and tomato
(5) Wrap
(6) Enjoy!

Denise! Jenna discovered these in Mexico, except there they made them with shrimp. She’s made them a few timess for us and they’ve become a family favorite. Thanks for posting, I enjoy your recipes.
