Mama Brensdal’s Hamburger Stew
Call me old-fashioned but I love getting snail mail. It is so exciting and refreshing to find a genuine letter or thank-you note buried amongst all the bills, ads, and junk mail. But what’s even more exciting than snail mail for me is packages!
A few days before Valentine’s Day, I came home to a package waiting for me on the counter from my mom. She mentioned sending back my coat that I had left home over Christmas but she went above and beyond just sending back the coat. The entire package was filled with candy and other goodies like a fancy new whisk, candle, blinged out watch, and a new cookbook! Whoo! My mom is amazing…I hope I never get too old for care packages! The cookbook is from Sheridan Memorial Hospital & Nursing Home auxiliary so I knew it was bound to be filled with delicious home-town recipes.
I couldn’t wait to test out some recipes so on a cold and rainy week in Portland when I had a craving for stew I knew exactly where to turn. I flipped through the new cookbook and found a recipe from my good friend Ryan’s mom, hence the “Mama Brensdal” title. There’s just nothing better than hot cup of soup or stew on a cold, rainy day — and everyone knows we have enough of those in Portland!
Here’s what you need:
– 1 lb hamburger
– 6-7 medium size red potatoes (chopped into bite size pieces)
– 8-10 mini carrots (chopped or whole)
– 1 small can button mushrooms (if desired)
– 3-4 celery stalks (if desired)
– 1 white onion (chopped)
– 2 cans tomato soup
– 2/3 tbsp chili powder
– 2 cans water (use tomato soup can)
– 1 tbsp Worcestershire sauce
Here’s how you make it:
(1) Brown hamburger and chop vegetables
(2) Add all ingredients to crock pot and cook on low for 8-10 hours

(1) Brown hamburger and chop vegetables
(2) Pour all ingredients (excluding hamburger) into a large kettle
(3) Cook until tender (approximately 1 1/2 – 2 hours)
(4) Add hamburger just before serving
(5) Enjoy!
