Southwest Sausage Egg Bake
If you’re looking for an easy breakfast to make for a crowd, check out this recipe for Southwest Sausage Egg Bake. This dish is great for groups, Sunday mornings with the family, bed and breakfasts, and even kegs and eggs parties! Keep in mind that this dish should be made the night before to allow it to set up correctly.
Here’s what you need:
– 1.5-2 lbs of mild to spicy sausage
– 1 dozen eggs
– 1/2 cup of onions, chopped
– 8 oz grated cheese
– 1/2 pint whipping cream
– 1 small can sliced mushrooms
– 1 small can chopped green chillies
– Salt and pepper to taste
– Salsa to top (if desired)
Here’s how you make it:
1. Brown sausage in a medium skillet and drain
2. Grease bottom of a 9 x 13 inch pan
3. Crack eggs into pan (break yolks but do not scramble)
4. Add salt and pepper to taste
5. Sprinkle 1/2 cheese
6. Pour cream on top
7. Top with mushrooms, onions, sausage, chilies, and remaining cheese
8. Refridgerate 10-12 hours (if you don’t have time to let it set, it’s not the end of the world…it will still come out okay)
9. Bake for 40 minutes at 350 degrees
10. Cut and serve with salsa (if desired)
11. Enjoy!

This looks delicious! I’ll have to save it aside for future reference. Being a Plentywoodian, do you know the Morstad family? I married Freda & Waldo’s grandson, Blake! Though he passed away, we still make our way up there every year or so, since I have one of Grandpa Steve’s & Grammie Patsy’s grandsons. Your comment just tickled me pink!

Oh yes, I know the Morstad’s well…their farm is right down the road from my Grandma Huffman’s! Patsy was my math teacher and Steve…let’s just say he is a hoot! He can always make me laugh. Blake was quite a bit older than me but I remember watching him play basketball when I was in middle school…that is so great that you can still make it up to our little corner of the world! I live in Portland now but I love going back to Plentywood to visit friends and family…there’s no place like home! Your blog is insightful and hilarious all at the same time…I will have to check it out more! I just started mine over Christmas so we’ll see how it goes.
